We have searched high and low for many, many months and tasted scores of different varieties of olives to find the right ones for this product. They had to be just right so as to match the flavours of the other ingredients. Not too salty, not too bitter - full and flavoursome.
We lightly roast the chosen ones in an aromatic dressing of home grown rosemary & olive oil combined with crushed whole garlic cloves and grated lemon zest.
Serving suggestions:

Drain, season and serve in a bowl as part of an antipasto platter.

Include in salads and stir through pasta.

Munch on their own as a snack on wafer crackers

Warm & serve with crusty bread & olive oil/balsamic for dipping.
